Coconut lemon bliss balls.

I’m always craving something sweet and I LOVE coconut. So why not make sweet, tart, healthy bliss balls that satisfy my sweet tooth?!

These are so good and so versatile.

I can make about a dozen variations with this base recipe.

Gadget: Food processor

Ingredients:

  • Four lemons fresh squeezed for juice  (I used organic)
  • Three tablespoons coconut nectar (or maple syrup!)
  • 1/2 teaspoon sea salt
  • 2 teaspoons vanilla extract
  • 1/4 cup of coconut oil
  • 1/3 cup coconut flour
  • 1 1/2 cup almond flour

To show you the exact brands I’m workin’ with, I took a picture.

I used Mexican vanilla bean extract.

Big Tree coconut nectar.

Nutiva coconut oil.

and Bob’s Red Mill flour(s)

 

 

 

Add your coconut and almond flour to your food processor.

Add your coconut nectar or maple syrup.

Add your vanilla extract.

Pop your lemons in the microwave for 20 seconds, roll them on the counter and then cut and juice them.

I used a small strainer above a bowl and hand squeezed my lemons.

I saved all of my squeezed lemons in a zip lock bag and put them in the fridge for lemon water.

Three lemons should yield about 1/2 cup of juice but remember; I said four. (I made my first batch with three and made a note next time to add one more lemon.) 🙂

Add your lemon juice to the food processor along with your salt.

Pop your coconut oil in the microwave for ten seconds to melt in and precisely measure 1/4 cup.

Pour that in the food processor.

Blend your mixture until you start to see a dough ball form.

I grabbed a loaf pan and put some glad press and seal wrap in it to start the rolling process!

Take your desired amount of dough and roll into smooth balls with your hands.

Here’s the fun part:

You can coat these bliss balls in whatever you want.

Coconut flakes, almond flour, powdered sugar, freeze dried fruits blended into a powder, cocoa powder, crushed almonds, lemon zest etc. The possibilities are literally endless.

I am a coconut lover so I dipped my bliss balls in coconut nectar and rolled them in sweet coconut flakes.

Once you have rolled your bliss balls in whatever fun topping you chose, pop these suckers in the fridge for twenty minutes and let that melted coconut oil firm back up.

After cooling in the fridge they are ready to eat! (Don’t leave them at room temp always put them back in the fridge or they will melt!)  😉
